Simple techniques for keeping fish in good quality at home
People want to eat fresh fish everyday but it is not possible always. When you buy fish from market the preliminary thing is to clean it with fresh water. Take fish to home and cook the fish for the day and if there is remaining it can be kept as fresh as possible. To keep fish in fresh condition, the following methods can be adopted, first way is to keep it in ice and it can be possible only for a very short period. Another method is freezing, this is the best and most practicable way to keep fish in its fresh condition. For freezing you have to put fish into refrigerator. The refrigerator at home will have a separate part for freezing.
Following points should be kept in mind before putting fish into refrigerator for freezing, you should not mix it with fruits or other cooked foods.
The most important thing before taking fish for freezing is it’s freshness, you should maintain the fish as fresh as possible. The fresh fish should be kept in ice condition (chilled water) before eight hours of being caught and it will be better to start freezing with out waisting any time. The most important point to be noted is that the fish should be kept in cold condition to maintain it freshness (Eg:- Chilled water) as soon as it is caught. Early freezing of fish is to maintain it’s better quality and for it’s long life. Normally the life time of frozen fish is 6 months when it is in good condition. After 6 month it’s texture and taste may change according to the time period.
Fresh fish is greatly vulnerable to food spoilage, bacteria and rotting or decaying. In fact fresh fish starts to deteriorate or lose it’s quality when it is taken out of water. The chances for this are more during the hot periods when the temperature is high. Due to this reason it is better not to replace it from room temperature and it is important to keep it in cool temperature as well as in clean condition.
All types and sizes of fish can be frozen. Small fish should be cleaned, while in the case of large fish the head and tail can be removed beforehand. But if you need head with the fish then it can be kept as it is. Large fishes can be divided into fillets or if you prefer to freeze the whole fish it can be done accordingly.
If you are keeping fish in a refrigerator for a long period, it will be better to keep it in a polythene bag placing the name of the fish as well as the date from which it is kept. This will be helpful to identify the duration of freezing through which server can also utilize it by date wise. It will be better to adopt the technique of first in first out method.
